The one week pasta diploma is not simply to give cooks an in-depth understanding of the principles of making many different types of fresh pastas, but understanding the specifics of process itself.
Our focus at The Mama Isa's Cooking School is on making the most nutritious and delicious pasta and pasta sauce part of a healthy lifestyle. We combine hands on pasta making with evidence based learning and relevant research papers about the food history, and apply the science as we cook. The workshop will be run by the pasta specialist chef Isa.
During our course you will understand how is important the health and good food: the Italian Mediterranean diet.
We will make:
Classic Egg Pasta
Spaghetti alla Chitarra
Bow tie farfalle pasta
Egg yolk ravioli
Fusilli - Orecchiette
Several pasta sauces and different pasta fillings

ALL THE PRINCIPLES OF MAKING PASTA ARE INCLUDED IN THIS COURSE.
a- Food history
b- Learn about versatility and purpose of different pasta doughs
c- Understand each step of the process
d- Learn about mixing and kneading techniques
e- Look at the role of egg and how this affects the texture
f- Understand how water and various hydration levels affect your pasta
g- We will look at the role flour has on the finished pasta in detail
h- Make sure that you really understand the point at which the pasta is cooked
i- Please note that the teaching involves a combination of both hands on lessons and some demonstrations for certain recipes, however, you will be involved in every aspect.
l- Discover why fresh pasta is particularly nutritious and digestible
m- An electronic copy of the recipes in ENGLISH.
You will have some free time, and there is the opportunity to walk, cycle, visit the local markets, restaurants, or visit the lovely art city of Padua.
The course aim is to give you the confidence and know-how to make your own homemade, artisan, fresh pastas and pasta sauces.
It will be a fun week, full of information, demonstrations and food. All participants will receive a certificate of attendance.
What is included: All food and drinks whilst at the school are provided. We will be eating pastas for lunch, and enjoying every day different Italian wines and Italian cheeses. The accomodation 6 nights in one of our lovely apartments.
What is not included: a- Students are responsible for: Travel; b- Transport to and from the Mama Isa's Cooking School; c- You will need to arrange for your own breakfast and evening meals
