The one week pasta diploma is not simply to give cooks an in-depth understanding of the principles of making many different types of fresh pastas, but understanding the specifics of process itself.
Our focus at The Mama Isa's Cooking School is on making the most nutritious and delicious pasta and pasta sauce part of a healthy lifestyle. We combine hands on pasta making with evidence based learning and relevant research papers about the food history, and apply the science as we cook. The workshop will be run by the pasta specialist chef Isa.
During our course you will understand how is important the health and good food: the Italian Mediterranean diet.
We will explore the original and old methods of pasta preparation and some modern techniques too!

ALL THE PRINCIPLES OF MAKING PASTA ARE INCLUDED IN THIS COURSE:
a- Food history
b- Learn about versatility and purpose of different pasta doughs
c- Understand each step of the process
d- Learn about mixing and kneading techniques
e- Look at the role of egg and how this affects the texture
f- Understand how water and various hydration levels affect your pasta
g- We will look at the role flour has on the finished pasta in detail
h- Make sure that you really understand the point at which the pasta is cooked
i- Please note that the teaching involves a combination of both hands on lessons and some demonstrations for certain recipes, however, you will be involved in every aspect.
l- Discover why fresh pasta is particularly nutritious and digestible
m- An electronic copy of the recipes in ENGLISH.
The course aim is to give you the confidence and know-how to make your own homemade, artisan, fresh pastas and pasta sauces.
It will be a fun week, full of information, demonstrations and food.
WEEK LONG PASTA DESCRIPTION
Day 1
Check in - Arrival in the morning to the Mama Isa's Cooking School and after the first pasta class (every pasta class is hands on and it lasts about 4-5 hours). After the pasta class free afternoon to visit the town or relax. Dinner Free.
Day 2
Second Pasta Class at 10:00 am - This day we have designed to give you an introduction to the different Regional Pastas. Free afternoon to relax. Dinner Free.
Day 3
Third Pasta Class at 10:00 am - Free afternoon to relax. Dinner Free.
Day 4
Free day to enjoy the town.
Day 5
Fourth Pasta Class at 10:00 am. Free afternoon to relax. Dinner Free.
Day 6
Fifth Pasta Class at 10:00 am - After the lesson farewell and goodbye (Check out). But if you need an extra night we can offer you an extra night on demand.
Every pasta class you will learn how to make authentic fresh pastas from scratch; different every day.
Possible one or two extra night in the accommodation. So you can arrive the day before the first class, and say goodbye the day after the last class.
