All our week long sourdough bread courses take place in our studio in small groups of max 4 people.

 

A sourdough starter (lievito madre - levain) is dough made from water and flour and populated with good bacteria (lactic acid bacteria) and wild yeasts.

In our week long bread courses we feed the old sourdough starter lievito madre levain (79 years old!) almost every day.

 

 

The fundamental point of sourdough starter is the combination of the aromatic molecules improves the shelf life, the taste, and above all the digestibility of the final product.

• Choosing the right flour for sourdough bread requires an understanding of its main characteristics.

About sourdough breads you need special flour with a speciale "strength" ("forza" W) in Italian. The strenght of flour is a combination of elasticity and extensibility and

 

We will use only strong flour ideal for long-proofing doughs, with high protein content and an elastic gluten (W 300/320, protein content: 13%, elasticity: P/L 0.50/0.60).

These give guests a total view of the subject and the means to develop their own bread recipes.

We will make sourdough bread and baking recipes with our old sourdough starter (79 years old) “it comes from our great-grandmother bakery shop and has been handed down from generation-to-generation by our family”.

All of them entirely and exclusively naturally leavened!

At the end of the course you will receive a 50g pot of starter free!!!

DID YOU KNOW? Sourdough bread "pane con lievito madre" is a great and important source of probiotics and prebiotics. While probiotics may not survive during the cooking baking process with the intense heat needed to develop the bread, the prebiotic does. So it is very healthy for us.

Sara sourdough starter was passed down to me by my great-grandmother Celestina.

This week SOURDOUGH BREAD course takes five days to learn sourdough in Italy. WHAT IS INCLUDED:

Day 1

DAY 1: SUNDAY Check in - Arrival in the afternoon to the Mama Isa's Cooking School and settle in your accommodation, free afternoon to visit the town or relax. Dinner Free.

Day 2

DAY 2: MONDAY First Sourdough Bread Class at 9:00 am - This day we have designed to give you an introduction to the sourdough bread knowledge, history and the culture. Free afternoon to relax. Dinner Free.

Day 3

DAY 3: TUESDAY Second Sourdough Bread Class at 9:00 am - Free afternoon to relax. Dinner Free.

Day 4

DAY 4: WEDNESDAY Third Sourdough Bread Class at 10:00 am - Free afternoon to relax. Dinner Free.

DAY 5: THURSDAY Free day to relax

 

or on demand (fee available on request) visit the famous Mercato di Padova (Sotto il Salone and Piazza delle Erbe and Piazza dei Frutti). The oldest market in the world (1218-2019). Chef Isa will guide you through the market and the downtown of Padova. Breakfast at the market with lovely cappuccino or espresso and pastries included. Afternoon and Dinner free.

DAY 6: FRIDAY Fourth Sourdough Bread Class at 9:00 am. Free afternoon to relax. Dinner Free.

DAY 7: SATURDAY Fifth Sourdough Bread Class at 9:00 am - After the lesson farewell and goodbye (Check out). But if you need an extra night we can offer you an extra night on demand.
